My explanation is that Hinduism is not my religion, but definitely my culture. When a religion unites a people over a long time, these two get inseparable and what we ascribe to religion is often just our culture. As to evolution, that's the theists' trump card. God is just as much of a theory, and the definition will keep evolving to fit current knowledge. As a fellow atheist and born a Hindu, I get similar questions.
